According to Official Guinness Records,

The oldest Olympic individual swimming gold medallist (male) is Anthony Ervin (USA, b. 26 May 1981) who won gold at 35 years 78 days in the men’s 50 m freestyle, at the 2016 Olympic Games, in Rio de Janeiro, Brazil, on 12 August 2016.Anthony won his first Olympic gold medal at the 2000 Olympic Games in Sydney, he therefore holds another record for the longest time between individual swimming gold medal wins in the same event.
