According to Official Guinness Records,

The largest lamington weighed 2,361 kg (5205 lb) and was made by Quality Desserts and the Toowoomba Chamber of Commerce at Newtown Rugby Club, Toowoomba, Australia, on 11 June 2011.
The colossal confectionery beat the previous record holder by a nail-biting 1kg (2.2 lbs)!
