According to Official Guinness Records,

The most pancakes made in one hour by an individual is 1,127 and was achieved by Erica Price (USA) in Tecumseh, Kansas, USA, on 17 April 2016. Erica's father, Steve Hamilton, held this record both in 2006 and in 2009. It was Erica's father's idea that she attempt this record.
